Eatdrinksleep is the company that Charles Inkin set up in 2000 to bring to life the newly refurbished Felin Fach Griffin.

    

The name sums up what we're about.  Our modern version of a traditional inn feeds and waters the traveller before affording them the best night’s sleep they remember.

Having done our best to achieve this at The Griffin and The Gurnard's Head in Cornwall, we were blindingly lucky to be asked by the people at Tresco to help them bring The Old Coastguard back to life.   

But we never forget that the stars of our show are the buildings that we love and work in and the landscapes that surround them.

Maybe that is the case more here in Mousehole than anywhere else where The Coastguard has a view that never ceases to make us gasp.
 

 





Charles Inkin

A product of the world-famous Ballymaloe under Darina Allen and, after working at the Michelin starred Shanks in Belfast, set up The Felin Fach Griffin.

He fell in love with West Cornwall in 1998 and felt he'd return one day. He did and has now been charming visitors to West Cornwall in his peculiarly bewhiskered way for nigh on seven years.

 

Kay Bolt

Kay joined us at the beginning of this journey in 2011 and runs the team with a good, old fashioned sense of style and the judicious use of the odd raised eyebrow.

She has two other managers that you might need to need to know about: Floor Manager, Louis Vanhinsbergh, followed us from The Gurnard's; and Front of House Manager, Alice Maddox, who runs the Roundhouse impeccably.


Tom Symons

Tom took over the kitchen reins having been our Sous Chef at The Gurnard's Head for 18 months.  He returns to his roots: this is where we first dipped his toes in the water as a Head Chef several years ago.  

Tom leans, when necessary, on the experience of The Gurnard's Head's Head Chef, Bruce Rennie who is tasked to keep a wise Scottish eye on both of our Cornish kitchens.   

Edmund Inkin

Edmund was brought up in Monmouthshire surrounded by a dairy herd and an immaculate kitchen garden.

A career in London during his twenties took precedence over his love for food and wine but, on receipt of a P45 from a London bank, he joined forces with Charles. He is rightly rarely permitted to talk to guests.
